Best Ever Zucchini Slice Recipe

Its been a while since I shared one of my recipes with you, so I thought I would post one of our absolute family favorites. As you probably know, I am a huge fan of recipes that have hidden vegetables, and this one is no exception. Zucchini slice is also fabulous because you can serve it for lunch or dinner, you can take it on a picnic lunch, its great hot or cold, and the left-overs are yum! So here is my fave recipe for Zucchini Slice:


375g zucchini, grated (unpeeled)
1 large onion, peeled and finely chopped
3-6 rashers bacon, rind removed and chopped (omit for vegetarians)
1 cup grated tasty cheese
1 cup self raising flour
1/2 cup oil
5 eggs
pinch salt and freshly ground black pepper

Place all ingredients into a bowl and mix well.

Spread into a greased 22cm pie plate or 20 x 26cm lamington tin. Bake in a moderate oven 190 deg C for 35-40 minutes, or until set and golden brown. Serve in wedges, either hot or cold with a salad and/or bread. Great to take on picnics or in school lunches cold. Enjoy!
